1. Press the tofu: Line a plate with a paper towel, place the block of tofu on it, put another paper towel on top, then place something heavy on top (like a stack of books or a pan) to press liquid out for 15-20 minutes. 2. Marinate the tofu: Cut the pressed tofu into cubes. In a bowl, marinate the tofu cubes in 3/4 cup of soy sauce. (You can also use other marinades like BBQ sauce if desired). 3. Bake the tofu: Preheat your oven to a moderate temperature (e.g., 400°F/200°C). Grease a baking sheet with cooking spray. Place the marinated tofu cubes on the baking sheet, ensuring they have space between them to crisp up. Do not dump any excess marinade onto the pan. 4. Bake for 20-30 minutes, or until the tofu is golden brown and crispy. 5. Add the cooked tofu to your favorite meal, such as Pad Thai or a stir-fry. Cooked tofu can be stored in the fridge for up to 4 days and reheats well.
