cup white rice

oz cheese
citrus fruit
bunch herbs

bunch stew vegetables
Instructions
Step 1: Get a skillet with high sides and start cooking your aromatics (onion, garlic) with protein. Season and cook until the outside of your protein is cooked (it will continue cooking). Step 2: Add hearty veggies that take at least 15 mins to cook, like bell pepper, broccoli, cauliflower etc. Step 3: Add white rice and liquid. You can use water, broth, stock, coconut milk, salsa, enchilada sauce etc. You want to use double the amount of liquid to rice (example: 2/3 cup rice and 1 1/3 cup liquid). Brown rice isn’t ideal for this dish because it takes a long time to cook, and then your veggies will be mushy/protein overcooked. Step 4: Bring the pot to a boil, then reduce to simmer. Cover and cook for 15 mins. At 10 mins, check the pan for rice sticking to the bottom. If the pan is dry/rice is stuck, add a little more water and scrape up the stuck rice. Step 5: When the rice is done, add quick cooking veggies like greens. Add citrus, herbs, cheese etc if using. That’s it! One pot rice dishes can last for up to 5 days in the fridge.
