
Egg Frittata With Sweet Potato, Broccoli, Onion And Cheddar
What you need

head broccoli

onion

dash salt & pepper

sweet potato

tbsp milk
egg

tbsp olive oil

clove garlic clove

cup shredded cheese
Instructions
1 Preheat your oven to 400 F 2 Crack 7 eggs into a large bowl, add the milk and whisk well with a fork. Set aside. 3 Add 1 TBSP oil to a skillet over medium heat. Then add the onion and garlic, saute, stirring occasionally, for 5 minutes. Add the chopped sweet potato and broccoli, salt and pepper. Then cover and cook on low heat for 10-15 minutes, until the potato is easily pierced with a fork. Note you can add any additional spices here (cumin, chipotle powder, chili powder, curry powder, paprika, etc) 4 Spray a baking dish with cooking spray (I used a 9x9 dish). Pour in the eggs and the cooked veggies. Top with cheddar cheese and use a fork to stir the cheese into the eggs slightly. Bake uncovered for 30-40 minutes, until the frittata is firm to the touch. Let it cool for 10 minutes, then divide it into your meal prep containers!View original recipe
