What you need

muffin mix, or cooking spray

cup wheat flour

cup granulated sugar

cup brown sugar

tsp cinnamon

tsp baking soda

tsp salt

carrot, peeled and grated

apple, grated

cup raisin, or dried cranberries

cup walnut, or any nut of your choice, chopped

cup flake coconut, optional

cup flax seed, optional

egg, or flax eggs, if needed

cup butter, melted

tsp vanilla extract

0 For vegan version: If using a flax/chia egg: add 2 tablespoons flaxseed or chia seed to a bowl with 6 tablespoons water. Stir and let it sit for 15 minutes until it has a goopy consistency, like an egg.ss 1 Preheat the oven to 350 F. Prepare a muffin tin with liners or cooking spray. 2 Mix the flour, oats, white sugar, brown sugar, salt, cinnamon and baking soda in a large bowl. 3 Mix in the grated carrot, apple, raisins, walnuts, coconut and flaxseed. 4 Add the butter and eggs/flax eggs to the bowl and mix until the wet and dry ingredients are fully combined. The batter will be a bit thick. 5 Use a ⅓ measuring cup to add the batter to the muffin tin. Sprinkle each muffin with a pinch of oats and bake for 20-25 minutes.
